So Stephen's brother and my brother and sister in-law accidentally sent some Christmas gifts to our old rental home address. Unfortunately Bryce's package was confirmed delivered, but when we stopped by our old home and asked the new tenants about it they said they never received a package. :( So it's a mystery where it is. My brother's wife was able to track down James' Christmas gift that they had accidentally sent to our old address and had it re shipped to our correct address. James was very excited to receive a belated Christmas gift!
My brother and sister in-law got him a "Find Me Book". I don't recall if I ever blogged about it. But my sister in-law has her own Public Relations and Marketing business. Find Me Book was one of her clients. They needed a new company identity, so since my brother (who also does graphic design work) was busy with his full time job my sister in-law asked if I wanted to earn some money in helping to develop a new logo for this company. I developed a logo and my brother finalized it, you can see it on the Find Me Book website. So it was really thoughtful of them to get James one.
He really got a kick out of seeing himself on these pages. Thank you again Oom and Tante!
So with my 2011 Goal in place, besides a new exercise routine I also have tried to plan weekly meals for our family instead of making dinner on a whim (which usually ends up being unbalanced). So I've done pretty good about buying groceries for 4-5 meals and sticking to it. I did like finding some holiday groceries on sale like egg nog and pie crust dough! We have a favorite Tater Tot casserole dish in our family - if you love meat/potatoes/gravy you'll love this dish. Stephen and the kids love it. Well I decided to put a spin on it and instead of putting it in a casserole dish I placed it in a pie crust (think turkey or chicken pot pie) and I also added some vegetables (broccoli) to the recipe. I thought it turned our pretty yummy! Our family also likes to drizzle a little ketchup on top before we eat it.
Tater Tot Casserole
1lb. ground turkey
2 small cans of cream of chicken soup
1 bag of tater tots
1/2 cup of shredded cheddar cheese
vegetable (broccoli, carrots, peas, etc.)
pie crust dough
The original way I make the casserole is by browning the ground turkey, draining any fat, then mixing in the soup. In a casserole dish make one layer of tater tots. Then pour turkey soup mix onto the tater tot layer. Sprinkle shredded cheese and then top with another layer of tater tots. Bake for 25 minutes at 425 degrees. To make the recipe like a pot pie add the vegetables to the turkey soup mix. In a spring form pan place a pie crust dough. Pour the turkey soup mixture in and layer with tater tots. Bake the same.
