Did I mention my hubby got me a fancy, dandy new blender for Christmas? So of course I made a Blender Recipes pinboard on my Pinterest right away. Been finding some yummy things to make and blend including fruit smoothies, chocolate & peanut butter smoothies and malt shakes. We've always had a mediocre blender to blend our weekly salsa batches (yes my hubby loves to eat salsa that much), but they were never powerful enough to make a good smoothie, shake or slushie. This new blender even has a specialized mode to make those, so I'm happy about that. For a few months now we've been really liking and making the Pioneer Woman salsa recipe. But I've been wanting to find a yummy avocado salsa recipe, and I think I've found it... key ingredients are fresh tomatillos and avocado.
1 lb. tomatillos
1 jalepeno pepper
1 habenero pepper (if you like it hot)
1 avocado
1/2 bunch of cilantro
1 thick slice of a whole red onion
1 Tbsp minced garlic
1 Tsp. salt
1 Tsp, cumin
Cut the tomatillos into quarters and place at bottom of the blender (they will liquify first and make the rest easier to blend). Slice up the peppers and throw them in. Chop up the onion and throw it in. Remove the avocado pit and scoop in the avocado. Chop up the cilantro and throw it on top. Add the garlic, salt and cumin. Start off blending by pulsing a few times to get the tomatillos blended. Then blend on medium speed until it's all blended. I stopped the blender 1-2 times and mixed all the ingredients around with a spoon and then proceeded to blend until it was done!
Hubby liked it a lot! And I think it tastes pretty close to the avocado salsa I love at Chacho's. We'll definitely be making this again. If you make it, let me know what you think!

I have a question for this delicious looking recipe - does it brown since it has avocados in it? I know this could be prevented by adding lime but wanted to see if that is even was necessary. Looks delish - I have never made salsa with raw tomatillos, they are always cooked, so can't wait to try this. Thanks!
Suzi, the original recipe which uses the same ingredients except for cumin said it lasts for about a week. I made it today, so I guess we'll see tomorrow. I put it in a canning jar so I could make the lid tight. It tasted super yummy!
MmmmMMMMmmmm I don't have a good blender though, in fact ours downright stinks... Make some for me will ya? Looks divine. I LOVE Avocado.
