Glorious Easter!


The kids were super excited to wake up to their fun-filled Easter baskets this morning but when I asked them why we celebrate Easter, Madeline said, "because Jesus died on the cross for us because He loves us." John 15:12-13 We're still working on explaining the Resurrection part to her. :)

After a packed filled Mass because of "Chri-easters" (those individuals that only attend church on Christmas and Easter :) we arrived home after a rainy morning to finish preparing for our friends, the Wright family, to arrive for a late Easter brunch. Above are Jimmena and I finishing up getting the food ready.

After we ate a delicious meal, Mia, Madeline, Gabriel and James anxiously await while Jimmena, Ben and Abraham hid eggs in the backyard.

After the hunt, we adults relaxed and talked downstairs while the kids played upstairs. Bagel came down to inform us the girls were putting makeup on. Yup....this is what M&M looked like after their makeovers. :)

Lastly I wanted to share a yummy-delish recipe of the quiche I made for Easter today. Kacey Frey shared her easy recipe with me - turned out great!

Frozen Puff Pastry, defrosted cut to fit 8” round pan
½ Cup Sliced White Onion (or less depending on how much onion you like)
3 Tbsp. Butter
1 ½ Cup Broccoli (optional, can use whatever you like, ham, bacon, spinach etc.)
2 ¼ Cup Jack Cheese
2 ¼ Cup Colby Cheese
½ Cup Parmesan Cheese
8 Eggs
½ Cup Half and Half
¼ Tsp. Nutmeg
¼ Tsp. Pepper
½ Tsp. Salt

1. Saute onion in butter.
2. Steam broccoli until tender.
3. Mix cheese, onion and broccoli in a bowl.
4. In a separate bowl mix 8 eggs, half and half, nutmeg, pepper and salt.
5. Place cheese mixture in pan and pour egg mixture over the top.
6. Bake 325-350 degrees for 40-50 minutes. Finished when quiche doesn’t jiggle. This has taken me quite a bit longer than 40-50 minutes. You can always use a kitchen thermometer to bring it to temp to make sure it is done.

I made mine with broccoli and bacon. Turned out great! Can't wait to eat leftovers of it tomorrow for my work lunch. Thanks for the recipe Kacey!

How fun! I can't wait for Calin to get old enough for Easter egg hunts. They are so much fun!
